I'm going to use the frozen crabmeat stuffing sold at Joe Pattis (Paulines brand packaged in Bayou La Batre) to make grilled stuffed fish.

Is that stuffing already cooked before it's frozen or does it get cooked during the grilling (or baking/broiling)? There's nothing on the package to indicate which.

Also, the lady who sold me the fish down there said she adds more crabmeat, onion, bread crumbs and Worcester sauce to the stuffing. Do you go along with that?
Or what would you add (if anything).

Here's a five-star recipe from Food.com http://www.food.com/recipe/crabmeat-stuffing-13133 But you will need a lot of ingredients...

Emeril Lagasse's recipe on the Food Network site looks good too.

Thanks, Eric.

I want to report that the Paulines frozen crabmeat stuffing sold at Pattis is really very very good. After it thawed I got a fork full to taste it. Man it is really flavorful. And that was even cold. Should be awesome with the fish.
