 Moroccan Orange-Walnut Salad

This is my favorite salad EVER. Yes, it takes an hour to prepare, but it is absolutely, positively well worth the time! While this is in one of my oldest, most favorite vegetarian cookbooks (The Enchanted Broccoli Forest by Mollie Katzen who also wrote all the Moosewood cookbooks (all of which are equally amazing)), even the most die-hard meat-eaters LOVE this salad.

I usually bastardize it a little... or a lot, as I do whenever I cook with recipes. I always add some cayenne and have used several different sorts of nuts. Lightly roasted piƱon (pine) nuts are really good in this salad in replacement of the roasted walnuts. Almonds don't have enough "bite" for this salad for my taste... too sweet. Also, tangerines are a super-yummy replacement for the oranges. I use coarse ground pepper... no "fly shit pepper," as my dad calls it, lol, and I have never salted this salad, as the recipe calls for. I also prefer to slice the orange (or tangerine) sections in half OR save out a couple of orange sections and squeezing their juice into the orange / honey / cinnamon / cayenne mixture.

I'm feeling too lazy to transcribe the recipe ("AGAIN," I should add, as every time I've taken this somewhere or served it in my home, the host and/or guests have asked for the recipe), so I'll attach it as a PDF file instead and hopefully that will work. Argh, the file size is limited to 20kB, so I'll attach the image and see if it's legible. Oh good, it looks good in the preview (please pardon my shaky hands :/... sorry).

Note that it is important to follow the directions, and I have found that this is best after the final mixture has sat covered/sealed in the fridge for several hours. It's an excellent salad for Thanksgiving, Christmas &/or Easter suppers, as you can do the work the night before then several hours before supper then mix it all together so all the flavors blend together. My mama and granny almost always ask me to prepare it for holiday suppers.



If anyone has trouble reading this I will be more than happy to transcribe the recipe and post it.

Oh, GREAT! I have several of the Moosewood cookbooks and they are all wonderful... that was the first one I got though, for my 22nd birthday Shocked Hard to believe it was that long ago!
